What better way to celebrate a long weekend than waking up to a refreshing yummy treat?! I made these popsicles yesterday with the hopes that they would turn out like the Pinterest picture. They look difficult to create, but let me tell you, they were so simple!!
If you aren’t familiar with chia seeds listed in the recipe, you can now get the at Wal-Mart, but definitely at any natural food store. They are loaded with health benefits, two of the best being fiber and protein. They are one of my favorite super foods.
I found popsicles molds at Wal-Mart and just opted to take out the plastic sticks that came with them. If I continue my popsicle making, I’ll definitely be ordering the mold linked in the recipe from Amazon.
The recipe is listed below. I will add that if you want a little extra sweetness add 1 extra Tbsp of the agave syrup. The original recipe wasn’t quiet sweet enough for me! You can also find agave syrup in the baking section at Wal-Mart. Enjoy!
KIWI COCONUT CHIA POPSICLES
yield: MAKES 10
- 1 3/4 cups canned coconut milk
- 3/4 cup soy milk (or any milk alternative)
- 1/4 cup + 1 Tbsp chia seeds
- 1/2 Tbsp agave syrup, or more to your liking
- 3 kiwis, peeled and sliced
Stir together coconut milk, soy milk, chia seeds, and agave syrup. If desired, add additional sweetened to taste.
Place sliced kiwis in popsicle molds. Use chopsticks or the back of a spoon to press kiwi to the sides of the mold.
Gently pour liquid mixture into popsicle molds. Insert wooden popsicle sticks. Freeze for at least 4 hours until popsicles are solid.

Happy Cinco De Mayo everyone! I’m sharing my festive look with you on the blog today and I must say, I am certainly glad the weekend is here. Joshua and I have a lot of changes we are adjusting to! In the last two months I’ve switched from being a full-time stay-at- home mom to being a full time work-from- home mom, flipping houses! Joshua has had a career change in the last month and is now his own business owner. I try to help as much as possible. It’s been a super exciting and scary process but he is flourishing non the less. We have recently sold our home in Tennessee and will be moving back to Virginia soon, another big change at a crazy time in our lives! Although there are a lot of changes going on for us, we are finally relying on prayer for all of our decision-making. Why is that so hard to do? To give up our own plans and give them to God?! I must say, it has been the most peaceful process we’ve gone through as a married couple and I wish we had started sooner. I am trying to keep up with my blogging in the midst of the madness, so you guys be patient with me! It’s hard to be a fashionista when I stay paint covered and dirty these days! Outfit details: I got an express gift card for my birthday, so I had fun going in and putting together an outfit to take on our weekend get-a-way a few weeks ago. This top is just as comfortable as it is cute! Some off shoulders can be binding, but I’m not kidding, I could sleep in this one. The skirt was also comfy and very cool for an evening in Florida. It’s such a fun piece. I love all of the floral detailing along with the adorable buttons on the front. The shoes are also Express and I love them! I am a shoe freak and usually have summer shoes in every color. I thought these are both fun and pratical! My necklace is from Charming Charlie. I got it a couple of years ago so I linked a similar one that I thought would also go really cute with this outfit!
