We are having the best time with our little man this year. He’s at such a fun age! Yesterday we started off the day watching dad paddle board and catching hermit crabs. I have to say this is the first time I have actually seen hermit crabs in the wild! Adler was amused yet somewhat hesitant when they would creep out of their shell.
We have spent our week running back and forth between the marsh and the ocean, we’ve fished, paddle boarded, surfed, tried out some kayak’s, explored the sand with Adler, and eaten more than we should. This is what vacation is all about ❤

Good morning from Litchfield Beach! It may be vacation but Joshua and I are on the Adler’s time clock. We’ve already been up long enough to cook ourselves a gourmet breakfast and take a morning bike ride. Adler is already down for his first nap, so I decided to do a little blogging!
Litchfield is one of my favorites! (The more I blog, the more I realize I have a lot of favorite places). We have a perfect location for riding bikes, so we took Adler and his cousins to get a little morning workout.
We have been coming here every Summer with Joshua’s family ever since we have been together (I believe this is our 7th Summer here). As I have gotten older, I love the fact that the beaches are NOT crowded. We have all the space in the world, so if you are a fan of that as well, you would love this vacation spot. Aside from the desolate beaches, there’s a beautiful private drive situated in between the ocean front rentals and the marsh across the road. Your front porch view is a marsh where you can fish, cast nets, watch others, or the sunset; and your back porch view is the ocean! This place is what I call my little slice of heaven :). Next Summer’s vacation spot for you…Litchfield Beach in South Carolina!

From what I can tell, the sports bra is only available in stores. My ever so comfortable white t-shirt is the American Eagle “soft and sexy” brand. Ok ladies, today I’m giving you a full review of Mac Mineralize Charged Water Moisturizers! If you are like me, whether you wear sunscreen or not, sometimes your face can get extra dry from Summer sun and heat. I stumbled upon these charged water moisturizers a couple of years ago and they have yet to fail me!
I’ll start with the eye cream. This cream is not only for extra moisture, but helps with firming, de-puffing, and reduces fine lines. I like to put this on just under my eyes before bed and then again after I wash my face in the mornings. Unfortunately, fine lines are a nemesis of mine, so I lather this stuff on! The cost is $35 and I have had this particular jar for over a year. I give this product 5 stars!
Secondly, the larger jar is the moisturizer I use for my overall face. I apply this once a day right before my foundation. This is for hydration and will also soothe and soften the skin. My issue in the past is that if I use moisterizer, my skin is way too oily, but if I use nothing it would get flakey and dry. I hated the way moisturizer would make my skin feel greasy! None of these are a result from the Charged Water Moisture Gel. It goes on very light and absorbs instantly! This product has been dermatologist tested and features a 77- mineral complex. I am telling you, it will change your life. The cost of this jar is $40 and totally worth it 🙂

I am NOT kidding you when I tell you that Wilderness at the Smokies is seriously one of my most favorite places on Earth! My family and I used to go for New Years Weekend, but the past two Summers we have taken advantage of the warm weather and stay for a long weekend with my Grandmother. Coffee, coffee, and more coffee! We had a packed but successful Memorial Day weekend. We started by going on a little family fishing trip Friday night to Boone lake. What better way to celebrate a long weekend than waking up to a refreshing yummy treat?! I made these popsicles yesterday with the hopes that they would turn out like the Pinterest picture. They look difficult to create, but let me tell you, they were so simple!!
If you aren’t familiar with chia seeds listed in the recipe, you can now get the at Wal-Mart, but definitely at any natural food store. They are loaded with health benefits, two of the best being fiber and protein. They are one of my favorite super foods.
I found popsicles molds at Wal-Mart and just opted to take out the plastic sticks that came with them. If I continue my popsicle making, I’ll definitely be ordering the mold linked in the recipe from Amazon.
The recipe is listed below. I will add that if you want a little extra sweetness add 1 extra Tbsp of the agave syrup. The original recipe wasn’t quiet sweet enough for me! You can also find agave syrup in the baking section at Wal-Mart. Enjoy!
KIWI COCONUT CHIA POPSICLES
yield: MAKES 10
- 1 3/4 cups canned coconut milk
- 3/4 cup soy milk (or any milk alternative)
- 1/4 cup + 1 Tbsp chia seeds
- 1/2 Tbsp agave syrup, or more to your liking
- 3 kiwis, peeled and sliced
Stir together coconut milk, soy milk, chia seeds, and agave syrup. If desired, add additional sweetened to taste.
Place sliced kiwis in popsicle molds. Use chopsticks or the back of a spoon to press kiwi to the sides of the mold.
Gently pour liquid mixture into popsicle molds. Insert wooden popsicle sticks. Freeze for at least 4 hours until popsicles are solid.
P.S. They are toddler approved and a very quick yet healthy breakfast! 🙂
